Simple Banana Pudding

Again, just the way Christian likes it ... nice and simple.


Vanilla Pudding mix
Milk, cold
Vanilla Wafers
Whipped Cream

Using the milk make the vanilla pudding according to the directions on the box.  Beginning with a layer of vanilla wafers alternate wafers, pudding and whipped cream until all the pudding has been used. 

Old Fashioned Peach Cobbler...

...just the way Christian likes it!!!


1/2 c. butter
1 c. flour (probably should be self-rising)
1 c. sugar
1 tsp. cinnamon
1 c. milk
1 29-oz. can peaches

Preheat the oven to 350 degrees.  Melt the butter in a 8x8 pan.  Mix flour, sugar, cinnamon and milk.  Pour into the pan.  Distribute the peaches over the top.  Bake for 45 minutes.

Fried Chicken

2 chicken breasts

Brine:  3 c. cold water
1/4 c. salt
1/4 c. honey

1/4 c. buttermilk, room temperature

Flour coating:  1 c. flour
1/2 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. onion salt
1 tsp. pepper
lots of cayenne

Brine the chicken for one hour.  Drain and dry the chicken. Coat with the buttermilk for 15 minutes.  Dredge in flour.  Put on a rack and let it rest for 15 minutes.  Heat the oil to 350 degrees to start, cook at about 300 degrees for 10-15 minutes.

Pumpkin Pie

This is just the Famous Pumpkin Pie recipe that Libby's has printed on the back of the pumpkin puree and we love it!!!


1 1/2 c. sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
4 eggs
1 (29-oz) can pumpkin
2 cans (12-oz. each) evaporated milk
2 unbaked 9-inch deep-dish pie shells

Mix sugar, salt, cinnamon, ginger and cloves in a small bowl.  Beat eggs in large bowl.  Stir in pumpkin and sugar spice mixture.  Gradually stir in evaporated milk.  Pour into pie shells.  Bake in preheated 425 degree oven for 15 minutes.  Reduce temperature to 350 degrees and bake 40-50 minutes or until knife inserted near center comes out clean.  Cool on wire rack for 2 hours.

Pumpkin Dip

I traditionally serve this on my Thanksgiving brunch buffet.  I serve it with gingersnaps and it is so so yummy!


8 oz. pkg. cream cheese, softened
1 c. brown sugar
2 c. pumpkin puree
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg

Cream the cheese, add the sugar and spices and, lastly, mix in the pumpkin puree.
